Some refrigerators are “frost-free,” while others, especially older refrigerators, require occasional manual defrosting. The part of the refrigerator that gets cold is called the evaporator. The air in the refrigerator is circulated through the evaporator. The heat is absorbed by the evaporator and the cold air is expelled.
In most cases, people want to keep the temperature of the refrigerator in the range of 2-5°C(36-41°F). To achieve these temperatures, the temperature of the evaporator is sometimes cooled to below the freezing point of water, 0°C(32°F). You may ask, why should we cool the evaporator below the temperature we want the refrigerator to be? The answer is so we can quickly cool the contents of your fridge.
A good analogy is the stove or fireplace in your home. It runs at a much higher temperature than your home needs, so you can heat your home quickly.
Back to the question of thawing….
The air contains water vapor. When the air in the refrigerator comes into contact with the evaporator, water vapor condenses from the air and water droplets form on the evaporator. In fact, every time you open the refrigerator, the air from the room comes in, bringing more water vapor to the refrigerator.
If the temperature of the evaporator is higher than the freezing temperature of the water, the condensate that forms on the evaporator will drip onto the drain pan, where it is discharged out of the refrigerator. However, if the temperature of the evaporator is below the freezing temperature of the water, the condensate will freeze and stick to the evaporator. Over time, ice builds up. Ultimately, this prevents the circulation of cold air through the refrigerator, so when the evaporator is cold, the contents of the refrigerator are not as cold as you would like because the cold air cannot be circulated efficiently.
That’s why defrosting is necessary.
There are different methods of defrosting, the simplest of which is not to run the refrigerator’s compressor. The temperature of the evaporator rises and the ice begins to melt. Once the ice has melted from the evaporator, your freezer has thawed and the proper airflow has been restored, and it will be able to cool your food to your desired temperature again.
